Background: Amylases are responsible for the hydrolysis of starch, mainly consisting of α -amylase (α -Al) and β -amylase (β -Al, EC 3.2.1.2) . β -amylase cleaved the α-1, 4-glycosidic bond from the non-reducing end of starch to produce reducing sugars such as glucose, maltose, maltose trisose and dextrin.
